Title: Cedar Plank Salmon

Yield: 4 Servings

4 Salmon fillets, 2 to 4
 ozEach
4 Cedar plank, 5 inch by 3
  Inch
2tsKosher salt
1/8tsBlack pepper
1/8tsDry mustard

Prior to cooking, allow the broiler to heat up. Once hot place the cedar plank into the oven to toast for 1-2 minutes. As I recall the cedar plank was placed on a cookie sheet.

Once the cedar plank is hot, carefully remove from the oven and place the salmon fillet onto the board. Quickly add the seasoning mix and replace plank into oven.

Allow salmon to broil for 7 to 9 minutes depending on how well done you like your fish.

Carefully remove plank from oven and place fish onto service plate. Discard the plank.

Accompanying this dish was a smoked tomato sauce that the fish was carefully place in with small amount drizzled on top but not so much as to take away the wonderful flavor of the cedar taste.

3 to 4 each vine ripe tomatoes 1/2 cup smoking chips 1 cup sour cream

Complete this recipe in a well ventilated area or outdoors!!! Spread smoking chips into smoker and allow to heat until they just start to smoke. Remove the core from the tomatoes and make a small "x" into the blossom and place the tomato into the smoker. Allow to smoke for 10 - 15 minutes and remove from heat. Remove tomatoes from smoker, remove the skin and seeds. Place tomatoes and other ingredients into a blender or food processor and blend thoroughly. Remove to a squirt bottle apply to finished plate with pizzazz!!
